Root Beer Float Cookies
1 Cup sugar 1 Cup packed brown sugar 1 Cup butter or margarine, softened 1/2 Cup buttermilk 2 eggs 2 teaspoons Root Beer extract (my friend only used 1/2 teaspoon and it was pretty potent) 1 teaspoon vanilla 4 Cup flour 1 teaspoon baking soda 1/4 teaspoon salt
Frosting
1 Cup powdered sugar 1 tablespoon half-and-half 2 teaspoon butter or margarine, softened 1 teaspoon Root Beer extract (1/2 teaspoon)
1. Pre-heat oven to 375, lightly grease cookie sheets.
2. In large bowl combine sugar, brown sugar, butter, buttermilk, eggs, Root Beer extract and vanilla. Beat at medium speed until well blended. Add flour, baking soda and salt. Beat at low speed until soft dough forms.
3. Drop dough by heaping teaspoonfulls 2 inches apart on cookie sheet. Bake 10-12 minutes. Cool completely.
Frosting
1. In small bowl, combine frosting ingredients. Beat at low speed until smooth. Spread frosting evenly on cookies. Let dry completely before storing.

Cherry Cheese Pie
1 8oz package of cream cheese, softened
1 14oz can of sweetened condensed milk
1/3 cup of lemon juice
1 9 inch prepared graham cracker crust
1 21oz can of cherry pie filling
Blend the first three ingredients with an electric mixer until smooth. Pour into the pie shell and chill for about 3 hours. Spoon the pie filling on top and chill for 2-3 more hours before serving.

Pumpkin Pancakes
1 1/4 cup pancake mix
1/3 cup pumpkin, canned or fresh
5 tsp sugar
2 tsp pie spice
3/4 cup milk
Makes about 4-5 pancakes.
